Preparation

Prepare the Lychee
If using fresh lychee, peel the fruit and remove the seed. If using canned lychee, drain and rinse the fruit. Measure out 1 cup of lychee and set aside.

Prepare the Lemongrass
Trim the ends of the lemongrass stalks and remove the tough outer layers. Bruise the stalks slightly with a knife or pestle to release the flavor.

Juice the Lemon
Squeeze fresh lemons to extract 2 tablespoons of lemon juice. Strain if necessary to remove seeds.
Mixing

Combine Ingredients
In a mixing glass or pitcher, combine the prepared lychee, bruised lemongrass, and lemon juice. Muddle gently to release the flavors, being careful not to over-muddle the lychee.

Add Sparkling Wine
Slowly add 2 cups of sparkling wine to the mixture. Stir gently to combine without losing the bubbles.
Serving

Pour and Garnish
Strain the mixture into chilled glasses filled with ice. Garnish each glass with a lemon slice and a few mint leaves for added freshness.

Serve the Lychee Spritz immediately while it's bubbly and refreshing. Enjoy!
