    Clean the Fish

    Rinse the Kinmedai under cold water and pat dry with paper towels. Make sure to remove any scales and guts if not already done.

    Prepare Marinade

    In a bowl, mix together the soy sauce, mirin, sake, grated ginger, minced garlic, and sesame oil until well combined.

    Marinate the Fish

    Place the Kinmedai in a dish and pour the marinade over it. Ensure the fish is well coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

Cooking

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Bake the Fish

    Place the marinated Kinmedai on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Garnishing

    Garnish the Fish

    Once the fish is done baking, remove it from the oven and sprinkle with chopped green onions and toasted sesame seeds. Serve with lemon wedges on the side.
