Cilantro Granita

    Prepare the Cilantro Base

    In a blender, combine fresh cilantro leaves, water, sugar, and lime juice. Blend until smooth.

    Strain the Mixture

    Pour the blended mixture through a fine mesh strainer into a shallow dish to remove any solids.

    Freeze the Granita

    Place the dish in the freezer and every 30 minutes, use a fork to scrape and fluff the mixture until it becomes light and granular. This should take about 2-3 hours.

Pineapple Preparation

    Prepare the Pineapple

    Peel, core, and slice the fresh pineapple into small cubes.

    Marinate the Pineapple

    In a bowl, toss the pineapple cubes with sugar and lime juice. Let it sit for about 10 minutes to macerate.

Honey Tuile

    Prepare the Tuile Batter

    In a mixing bowl, whisk together honey, all-purpose flour, egg whites, and melted butter until smooth.

    Shape the Tuiles

    On a baking sheet lined with parchment paper, use a spoon to drop small circles of the batter. Spread them thinly to form disks.

    Bake the Tuiles

    Bake in a preheated oven at 350°F (175°C) for 6-8 minutes or until the edges are golden brown. Remove from the oven and let cool.
