Preparation of Baby Yellowtail

    Clean the Fish

    Rinse the baby yellowtail under cold water to remove any impurities. Pat dry with paper towels.

    Fillet the Yellowtail

    Place the fish on a cutting board. Using a sharp knife, fillet the fish by cutting along the backbone and separating the flesh from the bones. Cut the fillets into bite-sized pieces.

Marinade Preparation

    Mix the Marinade

    In a bowl, combine soy sauce, mirin, sesame oil, grated ginger, and minced garlic. Whisk until well blended.

    Marinate the Fish

    Place the filleted yellowtail into a shallow dish. Pour the marinade over the fish, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Cooking and Serving

    Cook the Fish

    Preheat a grill or a skillet over medium heat. Remove the yellowtail from the marinade, allowing excess marinade to drip off. Grill or pan-sear the fish for about 3-4 minutes on each side, or until cooked through and lightly charred.

    Transfer the cooked yellowtail to a serving platter. Sprinkle with sliced green onions and toasted sesame seeds. Serve with lime wedges on the side for squeezing over the fish.
