Preparation of Beef

Slice the Westholme wagyu beef into thin strips, about 1/2 inch thick. Ensure uniformity for even cooking.

Marinating Beef
Place the sliced beef in a bowl and pour the ponzu sauce over it. Allow it to marinate for at least 30 minutes in the refrigerator to absorb the flavors.

Heating the Hot Rock
Preheat a hot stone or cooking rock over a flame or in an oven until it reaches a temperature of about 400°C (752°F). This will ensure that the beef cooks quickly and evenly.

Cooking the Beef
Once the rock is hot, carefully place the marinated beef strips on the rock. Cook for about 1-2 minutes on each side, or until desired doneness is achieved. Remember, wagyu beef is best enjoyed medium-rare.

Finely chop the chives and toast the sesame seeds in a dry skillet over medium heat until they are golden brown.
