Preparation of Fish

Cleaning the Hirame
Rinse the Hirame under cold water and pat dry with paper towels. Using a sharp knife, carefully remove the skin if desired. Cut the fish into thin slices, approximately 1/4 inch thick.

Prepare the Marinade
In a bowl, combine soy sauce, mirin, sake, sesame oil, grated ginger, minced garlic, and chopped scallions. Mix well until all ingredients are combined.

Marinate the Fish
Place the sliced Hirame in a shallow dish and pour the marinade over the fish. Let it marinate in the refrigerator for at least 30 minutes, allowing the flavors to penetrate the fish.

Plate the Dish
After marinating, remove the Hirame from the refrigerator and arrange the slices on a serving platter. Drizzle any remaining marinade over the fish.

Garnish
Sprinkle toasted sesame seeds over the Hirame and add a handful of microgreens or fresh herbs on top for added flavor and presentation.

Serve the Hirame chilled as an appetizer or main dish, accompanied by additional soy sauce if desired.
