Method

Preparation of Hamachi

    Select Fresh Hamachi

    Choose a 1 lb piece of fresh Hamachi (Yellowtail) from a reputable fish market, ensuring it has a clean smell and firm texture.

    Slice the Hamachi

    Using a sharp knife, slice the Hamachi into thin sashimi-style pieces, approximately 1/4 inch thick. Arrange the slices on a serving plate.

Sauce and Garnish Preparation

    Prepare the Marinade

    In a small bowl, mix together 1 cup of soy sauce, 2 tablespoons of mirin, and 1 tablespoon of sesame oil until well combined.

    Chop Green Onions

    Finely chop 2 green onions (scallions) and set aside for garnishing the dish.

    Toast Sesame Seeds

    In a dry skillet, toast 2 tablespoons of sesame seeds over medium heat until golden brown, stirring frequently to avoid burning.
