Preparation of Ingredients

Prepare the Yellowtail
Slice the yellowtail into thin sashimi-style pieces, approximately 1/4 inch thick, and set aside on a chilled plate.

Prepare the Thai Chili
Finely chop the Thai chili. If you prefer less heat, remove the seeds before chopping.

Prepare the Orange
Supreme the orange by cutting off the top and bottom, then slicing down the sides to remove the peel and pith. Cut out the orange segments and set them aside.

Combine the Ingredients
In a small bowl, mix the ponzu sauce with the chopped Thai chili. This will be your dressing.

Plate the Dish
On a serving plate, arrange the slices of yellowtail elegantly. Top with the orange segments and drizzle the ponzu chili dressing over them.

Sprinkle the microgreens and sesame seeds over the dish for garnish. Serve immediately for the best flavor.
