For the Green Tomato Katsu

Prepare the Green Tomatoes
Slice the green tomatoes into 1/2 inch thick rounds. Season both sides with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and panko breadcrumbs in the third.

Bread the Tomatoes
Dredge each tomato slice in flour, shaking off any excess. Dip into the beaten eggs, followed by coating in panko breadcrumbs, pressing gently to adhere.

Fry the Katsu
In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the breaded tomato slices in batches, frying for 3-4 minutes on each side until golden brown. Drain on paper towels.
For the Chili Aioli

Combine Ingredients
In a small bowl, mix together mayonnaise, chili paste, minced garlic, and lemon juice until smooth.

Add salt to taste and stir well. Cover and refrigerate until ready to serve.
For the Shiro Dashi

Prepare the Dashi
In a saucepan, combine dashi stock, shiro dashi, and soy sauce. Bring to a simmer over medium heat.

Add Lemon Zest
Once simmering, add lemon zest and stir. Remove from heat and set aside.
