Preparation

Vanilla Custard

1. Prepare the Custard Base

In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is warm but not boiling.

2. Mix Cornstarch and Egg Yolks

In a separate bowl, whisk together the cornstarch and egg yolks until smooth. Gradually whisk in a small amount of the warm milk mixture to temper the yolks.

3. Combine and Heat

Pour the egg mixture back into the saucepan with the remaining milk mixture and stir continuously over medium heat until it thickens, about 5-7 minutes. Add the vanilla extract and mix well.

4. Chill the Custard

Transfer the custard to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours until set.

Salted Fudge

5. Prepare the Fudge Mixture

In a saucepan, combine granulated sugar, heavy cream, and cocoa powder. Cook over medium heat, stirring constantly until the mixture comes to a boil.

6. Add Butter and Salt

Remove from heat and stir in the unsalted butter and sea salt until fully melted and incorporated.

7. Cool the Fudge

Pour the fudge into a greased 8-inch square baking pan and let it cool completely at room temperature. Once set, cut into small squares.

Toasted Blondie

8. Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.

9. Cream Butter and Sugars

In a large bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.

10. Add Eggs and Vanilla

Beat in the eggs one at a time, then stir in the vanilla extract.

11. Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add this mixture to the wet ingredients, stirring until just combined.

12. Add Walnuts and Bake

Fold in the chopped walnuts and pour the batter into the prepared baking pan. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

13. Cool and Toast

Allow the blondies to cool completely in the pan before cutting into squares. Optionally, toast the squares in a skillet until golden brown on each side.
