Method

Preparation of Engawa

  1. 1

    Select Fresh Engawa

Choose high-quality, fresh flounder fin muscle (engawa) from a reputable fish market. Ensure it's firm and has a translucent sheen.

  2. 2

    Clean the Engawa

Rinse the engawa gently under cold water and pat dry with paper towels to remove any excess moisture.

  3. 3

    Slice the Engawa

Using a sharp knife, slice the engawa into thin pieces, about 1/4 inch thick. Arrange them on a plate.

Marinade Preparation

  1. 4

    Mix the Marinade

In a small bowl, combine soy sauce, mirin, sake, salt, and fresh lemon juice. Stir well until the salt is dissolved.

  2. 5

    Marinate the Engawa

Pour the marinade over the sliced engawa, ensuring they are well coated. Allow to marinate for 15 minutes to enhance the flavors.

Serving

  1. 6

    Plate the Dish

After marinating, carefully arrange the engawa slices on a serving plate.

  2. 7

    Add Garnish

Sprinkle chopped green onions and sesame seeds over the engawa slices for added flavor and presentation.

  3. 8

    Serve

Serve immediately as a delicacy, ideally with a side of steamed rice or as part of a sushi platter.
