Preparation of Flounder Fin

    Begin by rinsing the flounder fins under cold water. Pat them dry with a paper towel.

    Lightly score the skin of the flounder fins with a sharp knife to allow for even cooking and to prevent curling.

Marinating

    In a small bowl, mix the sea salt, mirin, and soy sauce together.

    Brush the mixture over both sides of the flounder fins and let them marinate for about 15 minutes.

Torching

    Preheat a culinary torch or broiler.

    Once heated, carefully torch the skin side of the flounder fins until they become slightly charred and crispy, about 1-2 minutes.

    Flip the fins and briefly torch the flesh side for a few seconds to warm it without overcooking.

Plating

    On a plate, place a small mound of cooked sushi rice in the center.

    Lay the torched flounder fins over the rice.
