Prepare the Shrimp

Season the Shrimp
In a bowl, season the peeled and deveined shrimp with salt and black pepper. Set aside for about 15 minutes to allow the flavors to penetrate.
Make the Tempura Batter

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, and baking powder. Whisk together until evenly mixed.

Create the Batter
Pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing; a few lumps are okay.
Fry the Shrimp

Heat the Oil
In a deep pot or large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry
Dip each seasoned shrimp into the tempura batter, allowing excess batter to drip off. Carefully place the shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy.

Drain
Using a slotted spoon, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.
Prepare the Dipping Sauce

Mix the Sauce
In a small bowl, combine the soy sauce, mirin, and grated daikon radish. Stir until well mixed.
Serve

Serve the crispy shrimp tempura hot with the dipping sauce on the side.
