Preparation

    Prepare the Ingredients

    Chop any vegetables you will be using (bell peppers, carrots, etc.) and set aside. If using protein, ensure it's cooked and ready to add.

    Measure Out Ingredients

    Measure out the red curry paste, coconut milk, vegetable broth, lime juice, and puffed rice. Have the salt and vegetable oil ready as well.

Cooking

    Sauté Curry Paste

    In a large pot, heat the vegetable oil over medium heat. Once hot, add the red curry paste and sauté for about 2 minutes until fragrant.

    Add Coconut Milk and Broth

    Pour in the coconut milk and vegetable broth. Stir well to combine, and bring the mixture to a simmer.

    Incorporate Lime Juice and Salt

    Add the lime juice and salt to the pot, stirring to incorporate all flavors. Let it simmer for another 5 minutes.

    Add Optional Ingredients

    If using, add the chopped vegetables and cooked protein to the pot. Stir and let everything cook together for an additional 5-7 minutes until vegetables are tender.

    Prepare to Serve

    Remove the pot from heat. Taste and adjust seasoning with more salt or lime juice if needed.

Serving

    Serve with Puffed Rice

    Ladle the red curry into bowls, and top each serving with a generous handful of puffed rice. Garnish with fresh cilantro before serving.
