    Rinse the Sushi Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then cover and reduce heat to low. Cook for 18-20 minutes or until the water has absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Season the Rice

    In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.

Assembly

    Shape the Rice

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into a rectangular shape, approximately 2 inches long and 1 inch wide.

    Top with Hamachi

    Place a slice of hamachi on top of the molded rice, ensuring it covers the rice evenly.

    Garnish

    Sprinkle toasted sesame seeds over the hamachi. Add a slice of pickled chili on top for a spicy kick.
