Charred Poblano Tofu

Method

Cabbage

    Prepare the Cabbage

    Remove the outer leaves of the cabbage and cut it into quarters. Remove the core and slice the cabbage thinly.

    Sauté the Cabbage

    In a large skillet, heat olive oil over medium heat. Add the sliced cabbage, salt, and black pepper. Sauté for about 5-7 minutes until the cabbage is tender and slightly caramelized.

Mushroom Demi

    Rehydrate the Dried Mushrooms

    Place the dried mushrooms in a bowl and cover them with hot water. Let them soak for 30 minutes until softened, then chop them finely.

    Cook the Mushroom Demi

    In a saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent. Add the chopped mushrooms, vegetable broth, soy sauce, and thyme. Simmer for 15-20 minutes until reduced and thickened.

Guasacaca

    Make the Guasacaca

    In a blender, combine avocado, cilantro, garlic, lime juice, olive oil, jalapeño, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Charred Poblano Tofu

    Prepare the Poblano Peppers

    Char the poblano peppers over an open flame or under a broiler until the skins are blackened. Place them in a bowl, cover, and let steam for 10 minutes. Peel the skins off, remove the seeds, and chop.

    Cook the Tofu

    Slice the firm tofu into 1-inch thick slabs. In a skillet, heat olive oil over medium-high heat. Add the tofu slabs and sprinkle with cumin and salt. Cook for about 4-5 minutes on each side until golden brown. Add the chopped poblano peppers and cook for an additional 2-3 minutes.
