Pork Belly Preparation

Prepare the Pork Belly
Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Season generously with salt and black pepper.

Marinate the Pork Belly
In a bowl, combine soy sauce, mirin, minced garlic, and minced ginger. Place the scored pork belly in a zip-top bag and pour the marinade over it. Seal and refrigerate for at least 4 hours or overnight for best results.

Cook the Pork Belly
Preheat the oven to 300°F (150°C). Remove the pork belly from the marinade and place it on a roasting pan. Roast for 2.5 to 3 hours, until the meat is tender and the skin is crispy. Let it rest for 15 minutes before slicing.
