Method

Oyster Preparation

  1. 1

    Shuck the Oysters

Carefully shuck the oysters, making sure to keep the oyster meat in the shell and retain as much of the juice as possible.

  2. 2

    Preheat the Broiler

Preheat your oven's broiler to high, ensuring the rack is positioned about 6 inches from the heating element.

  3. 3

    Prepare the Oysters

Drizzle the melted A5 Wagyu beef fat over each oyster, followed by a small dollop of yuzu kosho. This will add a rich flavor to the oysters.

Topping

  1. 4

    Prepare the Panko Topping

In a small bowl, mix the panko breadcrumbs with chopped chives until well combined.

  2. 5

    Top the Oysters

Generously sprinkle the panko and chive mixture over each oyster, ensuring an even layer covers the meat.

Broiling

  1. 6

    Broil the Oysters

Place the prepared oysters on a baking sheet and broil in the preheated oven for 3-5 minutes, or until the topping is golden brown and the oysters are cooked through.

  2. 7

    Serve the Oysters

Carefully remove the oysters from the oven and allow them to cool for a minute. Serve immediately, garnished with additional chopped chives if desired.
