Method

Bone Marrow Preparation

    Prepare the Bone Marrow

    Preheat the oven to 450°F (232°C). Place the bone marrow bones upright in a baking dish. Sprinkle the sea salt and black pepper evenly over the bones.

    Roast the Bones

    Roast in the preheated oven for 15-20 minutes, or until the marrow is soft and starts to ooze out of the bones.

Whiskey Onion Preparation

    Sauté the Onions

    In a skillet, melt the butter over medium heat. Add the sliced large onion and salt, and cook until the onions are soft and caramelized, about 15 minutes.

    Deglaze with Whiskey

    Add the whiskey and brown sugar to the skillet. Stir and cook for another 5-7 minutes until the liquid reduces slightly and the onions are well-coated.

Tomatillo Relish Preparation

    Prepare the Tomatillos

    Remove the husks from the tomatillos and rinse them under cold water. Cut them in half.

    Blend the Ingredients

    In a food processor, combine the tomatillos, red onion, jalapeño, cilantro, lime juice, and salt. Pulse until coarsely blended.

    Chill Relish

    Transfer the tomatillo relish to a bowl and refrigerate until ready to serve.

Mustard Frill Preparation

    Prepare the Mustard Greens

    Wash the mustard greens thoroughly. Pat them dry and chop them coarsely.

    Dress the Greens

    In a large bowl, whisk together olive oil, lemon juice, salt, and pepper. Add the mustard greens and toss to coat.

Gyutoro Jam Preparation

    Prepare Gyutoro

    In a small saucepan, combine gyutoro, soy sauce, sugar, and sesame oil.

    Cook the Jam

    Cook over low heat, stirring occasionally until the mixture thickens and becomes jam-like, about 10-15 minutes.
