Preparation

    Prepare the Bok Choy

    Rinse the bok choy under cold water to remove any dirt or grit. Cut off the root end and separate the leaves. Roughly chop the leaves into bite-sized pieces.

    Chop the Tomato

    Dice the medium tomato into small pieces and set aside.

    Prepare the Lime

    Cut the lime in half and juice it, discarding any seeds. Set the juice aside for dressing.

Cooking

    Sauté the Bok Choy

    In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped bok choy and sauté for about 3-4 minutes until it starts to wilt.

    Add Tomato

    Add the diced tomato to the skillet with the bok choy and cook for an additional 2-3 minutes until the tomato softens.

    Incorporate Cashew Butter

    Stir in the cashew butter and lime juice. Mix until the cashew butter is well incorporated and everything is coated. Cook for another minute to heat through.

    Season and Serve

    Season with salt and pepper to taste. Serve warm as a side dish or over rice as a main dish.
