Preparation of Tuna

    Cutting the Tuna

    Using a sharp knife, slice the Bluefin Akami into 1-inch thick pieces. Make sure to cut against the grain for a tender bite.

    Marinating

    In a bowl, combine soy sauce, mirin, sesame oil, grated ginger, minced garlic, and sliced green onions. Mix well to combine. Place the tuna slices in a large resealable bag or a shallow dish, and pour the marinade over the tuna. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for a stronger flavor.

    Searing the Tuna

    Heat a non-stick skillet over medium-high heat. Remove the tuna from the marinade, letting the excess drip off. Sear the tuna slices for about 1 minute on each side, just until a crust forms but the center remains rare.

    Resting

    Once seared, remove the tuna from the skillet and let it rest on a plate for 5 minutes before slicing further.

Serving

    Plating

    Slice the seared tuna into thin strips and arrange on a serving platter. Drizzle any remaining marinade over the top.

    Garnishing

    Sprinkle toasted sesame seeds and chopped chives over the tuna. Serve with lime wedges on the side for squeezing over the tuna.
