Cleaning the Amaebi
Begin by rinsing the amaebi under cold water to remove any impurities. Gently pat them dry with a paper towel.

Removing the Shell
Carefully peel the amaebi, starting from the head and working your way down to the tail. Make sure to leave the tail intact for presentation.

Deveining
Using a sharp knife, make a shallow incision along the back of the amaebi to remove the dark vein. Rinse again under cold water.
Serving

Arranging the Amaebi
On a serving plate, place a bed of ice to keep the amaebi chilled. Arrange the cleaned amaebi on top of the ice.

Place shiso leaves around the amaebi. Serve with a small bowl of soy sauce and a dab of wasabi on the side.
