Method

Preparation of Fish

  1. 1

    Clean the Fish

Rinse the Akamutsu under cold water and pat dry with paper towels. Ensure all scales are removed and the inside is clean.

  2. 2

    Score the Skin

Using a sharp knife, make diagonal cuts on the skin of the fish to help the marinade penetrate and to promote even cooking.

Marinade the Fish

  1. 3

    Prepare Marinade

In a bowl, whisk together soy sauce, sake, mirin, grated ginger, and sugar until sugar is dissolved.

  2. 4

    Marinate the Fish

Place the cleaned and scored fish in a shallow dish and pour the marinade over it. Ensure the fish is fully coated. Cover and refrigerate for at least 30 minutes.

Cooking

  1. 5

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 6

    Bake the Fish

Place the marinated fish on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Serving

  1. 7

    Garnish and Serve

Once cooked, remove the fish from the oven. Garnish with chopped green onions and sesame seeds before serving. Enjoy your Akamutsu with steamed rice and vegetables.
