Method

Preparing the Akami Tataki

    Prepare the Tuna

    Trim the akami into a rectangular block approximately 2 inches thick. Season the sides with soy sauce and sesame oil.

    Crust the Tuna

    Spread the black sesame seeds on a plate. Roll the seasoned akami in the sesame seeds until all sides are coated.

    Sear the Tuna

    Heat a non-stick skillet over high heat. Sear the akami on all sides for about 30 seconds each until just browned. Remove from heat and let it cool.

    Slice the Tuna

    Once cooled, slice the akami thinly against the grain.

Preparing the Washed Onion

    Slice the Onion

    Thinly slice the red onion and place it in a bowl.

    Pickle the Onion

    In a separate bowl, combine water, rice vinegar, and salt. Pour this mixture over the sliced onions and let them soak for at least 15 minutes.

Preparing the Carrot Habanero Puree

    Cook the Carrots

    Peel and chop the carrots. In a saucepan, combine the chopped carrots and water. Cook until tender, about 15 minutes.

    Blend the Puree

    Add the cooked carrots, habanero pepper (seeded for less heat), olive oil, and salt to a blender. Blend until smooth. Adjust seasoning as needed.
