Preparation of Pickled Cucumbers

Prepare the Cucumbers
Wash the cucumbers thoroughly and slice them thinly into rounds.

Make the Pickling Solution
In a bowl, combine rice vinegar, sugar, and salt. Stir until the sugar and salt are completely dissolved.

Pickle the Cucumbers
Add the sliced cucumbers to the pickling solution. Ensure they are fully submerged. Cover and refrigerate for at least 30 minutes.
Preparing the Akami Nashi

Slice the Tuna
Using a sharp knife, slice the bluefin tuna into thin sashimi-style pieces.

Prepare the Asian Pear
Core and slice the Asian pear into thin wedges.

Assemble the Dish
On a plate, arrange the slices of tuna, followed by the pickled cucumber rounds, and the Asian pear wedges.

Drizzle ponzu sauce over the arranged ingredients and finish with a spoonful of chili crisp on top.
