Preparation of Tuna

Select the Tuna Loin
Choose a fresh Akami (tuna loin) that is bright red in color and firm to the touch. Ensure it is sashimi grade if you plan to serve it raw.

Trim the Tuna
Using a sharp knife, trim any sinew or dark fatty parts from the edges of the tuna loin. Cut the tuna into 1-inch thick slices.
Marinating the Tuna

Prepare the Marinade
In a small bowl, combine soy sauce, mirin, sesame oil, wasabi, and grated ginger. Mix well until fully combined.

Marinate the Tuna
Place the sliced tuna in a shallow dish and pour the marinade over the top. Ensure the tuna is fully submerged in the marinade. Cover and refrigerate for 30 minutes.
Serving the Dish

Plate the Tuna
Remove the tuna from the marinade and gently pat dry with paper towels. Arrange the tuna slices on a serving platter.

Garnish
Sprinkle chopped scallions and sesame seeds over the tuna slices. Serve immediately with extra soy sauce and wasabi on the side.
