Prepare the Fish
Cleaning the Horse Mackerel
Start by cleaning the horse mackerel. Rinse the fish under cold water, then use a knife to remove the scales. Cut open the belly to remove the innards and rinse again until clean.
Filleting the Fish
Make a cut just behind the head and along the spine to remove the fillets from both sides of the fish. Ensure to keep the skin intact. Set the fillets aside.
Prepare the Marinade
Mix Marinade Ingredients
In a bowl, combine the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and chili flakes. Whisk together until well mixed.
Marinate the Fish
Place the mackerel fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
Cook the Fish
Grilling the Fillets
Preheat a grill or grill pan over medium-high heat. Remove the fillets from the marinade, allowing excess marinade to drip off. Grill the fillets skin-side down for about 5-7 minutes, then flip and grill for an additional 3-5 minutes until cooked through.
Serve
Garnishing
Once the fish is cooked, remove it from the grill and transfer to a serving platter. Sprinkle with chopped green onions and sesame seeds. Serve with lemon wedges on the side.
