Hollandaise Sauce

Prepare the Beef

    Season the Wagyu

    Take the A5 Wagyu beef and season it generously with salt and black pepper on all sides. Allow it to come to room temperature for about 30 minutes before cooking.

    Cook the Wagyu

    In a hot cast iron skillet or grill, sear the Wagyu beef for about 2-3 minutes on each side for medium-rare, or until it reaches your desired doneness. Let it rest for 10 minutes before slicing.

Prepare the Maitake

    Sauté the Maitake

    In a skillet, heat the olive oil over medium heat. Add the maitake mushrooms and season with salt and black pepper. Sauté for about 5-7 minutes until golden brown and tender.

Make the Hollandaise Sauce

    Prepare the Sauce

    In a heatproof bowl, whisk the egg yolks until they become thick and pale. Place the bowl over a pot of simmering water (double boiler), ensuring the bowl does not touch the water.

    Add Butter

    Slowly add the melted unsalted butter to the egg yolks while continuously whisking until the mixture is thick and creamy. Stir in lemon juice, salt, and cayenne pepper. Remove from heat.
