Preparing Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a large bowl and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Sushi Rice
Combine the rinsed rice and water in a rice cooker. Cook according to the rice cooker instructions. If using a pot, bring to a boil, then reduce heat and simmer for 20 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until dissolved. Once the rice is cooked, transfer to a large bowl and fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Uni
Handle the uni gently and if necessary, rinse delicately under cold water. Pat dry with paper towels.

Prepare Caviar
Keep the caviar chilled until ready to use. Use a small spoon to serve.
Assembling the Nigiri

Form the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1 tablespoon) and mold it into an oval shape. Repeat with the remaining rice.

Top with Ingredients
Place a slice of A5 Wagyu on top of each rice oval. Add a piece of uni on top of the wagyu, and finish with a small dollop of caviar.

Serve
Serve the nigiri on a platter with soy sauce and wasabi on the side for dipping. Enjoy immediately!
