Method
Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This will remove excess starch.

Cook the Rice
In a rice cooker, combine the rinsed sushi rice and 1.2 cups of water. Cook according to the rice cooker instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Let the rice cool to room temperature.
Prepare A5 Miyazaki Beef

Slice the Beef
Thinly slice the A5 Miyazaki beef against the grain into strips that are approximately 1/2 inch thick.

Season the Beef
Sprinkle salt and black pepper over the sliced beef to taste.

Assemble the Nigiri

Shape the Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1 tablespoon) and shape it into an oval mound.

Top with Beef
Place a slice of seared A5 Miyazaki beef on top of each rice mound.

Add Caviar
Using a small spoon, place a dollop of caviar on top of the beef on each nigiri.
