Prepare the Hot Rock
Preheat the hot rock on a grill or stovetop until it reaches a high temperature, around 400°C (752°F). This may take approximately 15-20 minutes.

Slice the Wagyu
While the rock is heating, slice the Westholme Wagyu beef into thin strips, about 1 cm thick. This will ensure quick cooking on the hot rock.

Prepare the Lemon
Cut the lemon into wedges for serving. You can also squeeze some juice over the beef for added flavor if desired.

Prepare the Kosho
Place the kosho in a small serving bowl for dipping. Adjust the amount based on your spice preference.

Cook the Wagyu
Once the hot rock is ready, carefully place the sliced Wagyu beef directly on the hot rock. Sear each side for about 30 seconds to 1 minute, depending on your desired doneness.

Serve Immediately
As soon as the beef is cooked to your liking, remove it from the rock and place it on a serving plate. Serve with lemon wedges and kosho on the side.
