Preparation

Prepare the Beef
Slice the A5 Wagyu beef into thin, bite-sized pieces, approximately 1 cm thick. This will allow for quick cooking on the hot rock.

Prepare Garnish
Finely slice the shallots and chop the chives. Set aside along with the microgreens for garnishing the dish.

Prepare Ponzu Sauce
Pour the ponzu sauce into a small serving bowl for dipping.
Cooking

Heat the Hot Rock
Preheat your hot stone or rock according to the manufacturer's instructions until it reaches a temperature suitable for cooking meat (around 200°C or 392°F).

Cook the Beef
Place the thinly sliced A5 Wagyu beef on the hot rock. Cook for approximately 30 seconds on each side, or until it reaches your desired doneness. The high fat content of the wagyu will render quickly, providing a rich flavor.
Serving

Plate the Dish
Arrange the cooked beef on a serving platter. Garnish with sliced shallots, chopped chives, and microgreens.

Serve with Dipping Sauce
Serve the hot rock beef with the ponzu sauce on the side. Optionally, include soy sauce and wasabi for additional flavor options.
