Potato Hay

    Prepare the Potatoes

    Peel and slice the potatoes very thinly using a mandoline or a sharp knife. Rinse them under cold water to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep pan over medium heat. Once hot, add the sliced potatoes in batches. Fry until golden and crispy, about 3-4 minutes. Remove and drain on paper towels. Season with salt while hot.

Tomato Curry

    Sauté the Vegetables

    In a medium pot, heat 2 tablespoons of oil over medium heat. Add the chopped onions, garlic, and ginger. Sauté until the onions become translucent, about 5 minutes.

    Add Tomatoes and Spices

    Add the chopped tomatoes and curry powder to the pot. Cook for about 10 minutes until the tomatoes break down and become saucy.

    Finish the Curry

    Pour in the coconut milk and salt. Let the curry simmer for another 10 minutes. Adjust seasoning as needed.

Chawanmushi

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, dashi stock, soy sauce, mirin, and salt until well combined.

    Add Fillings

    Distribute the sliced mushrooms and green onions evenly into four small cups. Pour the egg mixture over the fillings, leaving a little space at the top.

    Steam the Chawanmushi

    Prepare a steamer and bring water to a boil. Place cups in the steamer basket and cover. Steam for about 15-20 minutes until the custard is set.
