    Prepare the Grill

    Preheat your grill to high heat, around 450°F (232°C).

    Clean the Oysters

    Rinse the fresh oysters under cold water to remove any sand or debris. Scrub the shells with a brush if necessary.

    Grill the Oysters

    Place the oysters directly on the grill grates. Close the lid and grill for about 5-7 minutes, or until the shells open slightly.

    Add Gruyère Cheese

    After the oysters have opened, remove them from the grill. Top each oyster with a small amount of gruyère cheese and a pat of butter.

    Finish Grilling

    Return the oysters to the grill and cook for an additional 2-3 minutes until the cheese is melted and bubbly.

    Slice the Onion

    Peel and thinly slice the large onion.

    Cook the Onion

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they become soft and translucent (about 10 minutes).

    Caramelize the Onion

    Sprinkle the brown sugar and salt over the onions, then reduce the heat to low. Continue to cook, stirring frequently, until the onions are deep golden brown and caramelized (around 20-25 minutes).

    Prepare the Shallots

    Finely chop the shallots.

    Cook the Jus

    In a saucepan, combine the chicken stock, dry white wine, and chopped shallots. Bring to a simmer over medium heat.

    Reduce the Liquid

    Let the mixture reduce by half, which should take about 10-15 minutes.

    Finish the Jus

    Remove from heat and whisk in 1 tablespoon of butter. Season with salt and black pepper to taste.
