Celery Root Fondant Preparation

Prepare the Celery Root
Peel the celery root using a sharp knife, ensuring to remove all the knobby bits. Cut it into even rectangular pieces, about 2 inches in size.

Sauté the Fondant
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once the butter is melted and foamy, add the celery root pieces and cook for about 5-7 minutes until they are golden brown on all sides.

Add Broth and Seasoning
Pour in the vegetable broth and add the salt, black pepper, and fresh thyme. Bring to a gentle simmer.

Braise the Celery Root
Cover the skillet with a lid and let the celery root braise for 30-40 minutes until tender, occasionally checking to ensure it doesn’t dry out. Adjust the heat as necessary.

Finish with Butter
Once the celery root is tender and the broth has reduced, stir in the remaining 2 tablespoons of butter until melted and the sauce is glossy. Remove from heat.
