Marinade Preparation

    Prepare the Marinade

    In a bowl, mix together the olive oil, lemon juice, garlic powder, paprika, salt, and black pepper to create the marinade.

    Marinate the Chicken

    Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for better flavor absorption.

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F).

    Grill the Chicken

    Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Rest the Chicken

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

    Prepare the Avocado

    While the chicken is resting, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt if desired.

    Slice the tomato into thin slices.

    Assemble the Sandwich

    Spread chipotle mayo on one side of each slice of bread. On two slices, layer the leafy greens, sliced grilled chicken, mashed avocado, and tomato slices. Top with the remaining bread slices, mayo side down.

    Cut the sandwiches in half and serve immediately, optionally with a side of chips or salad.
