    Prepare the Ingredients

    Chop the onion and bell pepper into small pieces. Set aside.

    Cook the Bacon

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bacon strips and cook until crispy. Remove from the skillet and place on paper towels to drain excess fat.

Cooking

    Sauté Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they are soft and translucent.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk them with salt and black pepper until well combined.

    Cook the Eggs

    Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring occasionally, until the eggs are fully cooked, about 5-7 minutes.

    Add Cheese and Bacon

    Once the eggs are cooked, add the cheddar cheese (shredded) and crumbled bacon to the skillet. Stir until the cheese melts and is well combined.

Serving

    Plate the Dish

    Serve the hangover mixture on plates or in bowls. Optionally, top with sliced avocado, fresh cilantro, and hot sauce to taste.
