Prepare the Ribs
Start by preheating your oven to 300°F (150°C). Rinse the pork ribs under cold water and pat them dry with paper towels. Season both sides of the ribs with salt and black pepper.

Make the Marinade
In a bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, red chili flakes, lime juice, and sesame oil. Whisk the ingredients together until well combined.

Marinate the Ribs
Place the ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Remove the ribs from the marinade and place them on a baking sheet lined with aluminum foil. Reserve the marinade for basting. Cover the ribs tightly with another piece of foil and bake in the preheated oven for 2.5 hours.

After 2.5 hours, remove the foil and baste the ribs with the reserved marinade. Turn the oven to broil and cook for an additional 10-15 minutes, or until the ribs are caramelized and slightly charred.
