In a mixing bowl, combine the shredded smoked chicken, diced jalapeño, sliced green onions, shredded Monterey Jack cheese, and shredded cheddar cheese. Mix well until all ingredients are evenly distributed.

Lay one flour tortilla flat on a clean surface. Place a generous amount of the chicken mixture on one half of the tortilla. Fold the other half over to cover the filling. Repeat with the remaining tortillas and filling.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add one assembled quesadilla. Cook for 3-4 minutes on one side until golden brown and crispy. Carefully flip and add another tablespoon of olive oil if necessary, cooking for an additional 3-4 minutes on the other side. Remove from skillet and keep warm. Repeat with remaining quesadillas.
