    Slice the Steak

    Thinly slice the ribeye steak against the grain into strips approximately 1/4 inch wide.

    Chop Vegetables

    Dice the green bell pepper and onion into small pieces.

Cooking

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes or until they are softened. Remove them from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced steak. Season with salt and black pepper. Cook for about 3-5 minutes until the steak is browned and cooked through, stirring frequently.

    Combine Ingredients

    Return the sautéed onion and bell pepper to the skillet with the cooked steak. Stir to combine and cook for an additional 2 minutes to heat through.

    Melt the Cheese

    Lay the slices of provolone cheese over the steak and vegetable mixture. Cover the skillet with a lid and let it cook for about 2 minutes, or until the cheese is melted.

    Scoop the cheesesteak mixture onto each hoagie roll and serve immediately.
