Method

Salsa Preparation

  1. 1

    Roasting the Vegetables

Preheat your grill or oven to a high temperature. Place the Roma tomatoes, red onion (cut in half), garlic cloves (unpeeled), and jalapeño pepper on the grill or in a roasting pan. Roast until the skins are charred and the vegetables are tender, about 10-15 minutes.

  2. 2

    Chopping and Mixing

Once the vegetables are roasted, remove them from the heat and let them cool slightly. Peel the garlic and chop all the vegetables into small pieces. In a mixing bowl, combine the chopped vegetables with fresh cilantro, lime juice, salt, and black pepper. Stir well to combine.

  3. 3

    Adjusting Flavor

Taste the salsa and adjust seasoning if needed, adding more lime juice or salt to suit your preference.

Chips Preparation

  1. 4

    Cutting Tortillas

Stack the corn tortillas and cut them into triangles (like pizza slices) to make chip shapes.

  2. 5

    Frying the Chips

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until hot. Carefully add a handful of tortilla triangles to the oil and fry until golden brown and crispy, about 2-3 minutes. Remove the chips with a slotted spoon and drain on paper towels.

  3. 6

    Seasoning the Chips

While the chips are still warm, sprinkle them with salt to taste. Repeat the frying process with the remaining tortilla triangles.
