    Prepare the Salad Base

    In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, and red onion. Chop the romaine into bite-sized pieces, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Toss gently to mix.

    Prepare the Chicken

    Preheat your oven to 400°F (200°C). In a shallow bowl, set out the all-purpose flour. In a second bowl, whisk the egg. In a third bowl, place the breadcrumbs. Season the flour with salt and black pepper.

    Coat the Chicken

    Take each chicken breast and dredge it in the seasoned flour, shaking off any excess. Dip it into the whisked egg, allowing any excess to drip off, then coat it in the breadcrumbs, pressing firmly to adhere.

    Bake the Chicken

    Heat the cooking oil in a large oven-proof skillet over medium heat. Once hot, add the coated chicken breasts to the skillet. Cook for about 3-4 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

    Buffalo Sauce Coating

    Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes. Drizzle the buffalo sauce over the chicken and toss gently to coat evenly.

    Slice the crispy buffalo chicken into strips and place it on top of the prepared salad base. Serve immediately for a fresh and crunchy meal.
