Prepare the Chips
Cut the corn tortillas into triangles to create chips.

In a large frying pan, heat the vegetable oil over medium heat.

Once the oil is hot, carefully add the tortilla triangles in batches, frying them until golden brown and crispy, about 2-3 minutes per batch.

Remove the chips from the oil and place them on paper towels to drain excess oil. Season with salt while still warm.
Chipotle Queso

Make the Queso
In a medium saucepan, combine the Velveeta cheese and cream cheese.

Add the chipotle peppers, diced tomatoes with green chilies, and milk to the saucepan.

Heat over medium-low heat, stirring frequently until the cheeses are melted and the mixture is smooth.

Stir in the chopped cilantro and add salt to taste. Keep warm until ready to serve.
Brisket Chili

Add the minced garlic and cook for an additional minute until fragrant.

Stir in the shredded brisket, kidney beans, diced tomatoes, chili powder, cumin, and season with salt and black pepper to taste.
