Method

To Prepare the Birria

    Prepare the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. Rinse them under cold water and then soak them in hot water for about 15 minutes until they are soft.

    Blend the Sauce

    In a blender, combine the softened chiles, garlic cloves, onion, cumin powder, oregano, salt, and black pepper. Blend until smooth, adding a bit of the soaking water if needed to assist blending.

    Cook the Beef

    In a large pot or Dutch oven, heat a bit of oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 5 minutes per side.

    Combine and Simmer

    Pour the blended sauce over the seared beef, add the bay leaves, beef broth, and beer. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 3 hours or until the beef is very tender.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and stir to combine it with the sauce. Keep warm.

To Assemble and Cook the Quesadilla

    Prepare the Quesadilla

    Heat a skillet over medium heat and add a little cooking oil. Place a tortilla in the skillet, then add a generous portion of shredded cheese and some of the shredded birria on one half of the tortilla.

    Fold and Cook

    Fold the tortilla in half over the filling. Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.

    Serve

    Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve with fresh cilantro and lime wedges on the side.
