Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle active dry yeast (2 tbsp) over the water and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Once the yeast mixture is frothy, add it to the flour mixture along with melted unsalted butter (2 tbsp). Stir until the dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until it is smooth and elastic. Form the dough into a ball.

  4. 4

    Let the Dough Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shaping and Baking

  1. 5

    Prepare the Baking Solution

While the dough is rising, bring 10 cups of water to a boil in a large pot. Add baking soda (2 tbsp) to the boiling water.

  2. 6

    Shape the Pretzels

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and shape into a pretzel.

  3. 7

    Boil the Pretzels

Carefully drop each shaped pretzel into the boiling baking soda solution for about 30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.

  4. 8

    Add Egg Wash and Salt

Brush each pretzel with the beaten egg (1 large) and sprinkle with coarse sea salt (1 tbsp) to taste.

  5. 9

    Bake the Pretzels

Preheat the oven to 450°F (230°C) and bake the pretzels for 12-15 minutes or until golden brown.
