Preparation and Cooking

    Preparing the Steak

    Pat the sirloin steak dry with paper towels. Rub both sides with olive oil, and season generously with sea salt, black pepper, and fresh rosemary. Let it rest at room temperature for about 30 minutes.

    Heating the Rock

    Place a flat, smooth rock (about 1 inch thick) in the oven at 450°F (232°C) for about 30 minutes or until very hot. Alternatively, you can heat the rock on a grill.

    Preparing Vegetables

    Slice the vegetables into bite-sized pieces. Toss them with a little olive oil, salt, and pepper, and set aside.

    Cooking on the Rock

    Carefully remove the hot rock from the oven and place it on a heat-resistant surface. Place the steak on the rock and cook for 2-3 minutes on each side for medium-rare, adjusting the time to your preferred doneness.

    Grilling Vegetables

    While the steak is cooking, use another smaller heated rock or a grill pan to cook the vegetables. Grill for about 5-7 minutes until tender.

    Once cooked, remove the steak from the rock and let it rest for a few minutes before slicing. Serve with the grilled vegetables on the side.
