    Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a large bowl, whisk together the gluten-free flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually add the cold sparkling water, whisking until the batter is smooth and has no lumps.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

    Coat the Onion Rings

    Dip each onion ring into the batter, ensuring it is well coated. Allow any excess batter to drip off.

    Fry the Onion Rings

    Carefully place the coated onion rings into the hot oil in batches, avoiding overcrowding the pot. Fry for about 2-3 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
