Cooking the Pasta

Boil Water

In a large pot, bring 4 quarts of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook Pasta

Add the whole wheat linguini to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta

Once cooked, drain the pasta in a colander and set aside. Do not rinse.

Making the Ragu

Sauté Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3 minutes, until translucent.

Add Carrots and Garlic

Stir in the diced carrots and minced garlic. Cook for an additional 2-3 minutes until the carrots start to soften.

Add Remaining Vegetables

Add the diced zucchini and bell pepper to the skillet. Sauté for another 5 minutes until all vegetables are tender.

Add Tomatoes and Broth

Pour in the canned diced tomatoes and vegetable broth. Stir to combine.

Season the Ragu

Add dried oregano, dried basil, salt, and black pepper. Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally.

Finish the Ragu

Stir in the chopped fresh basil just before serving.

Combining and Serving

Combine Ragu and Pasta

Add the drained linguini to the skillet with the ragu. Toss well to coat the pasta in the sauce.

Serve

Serve the whole wheat linguini topped with grated Parmesan cheese and additional fresh basil if desired.
