Cooking the Pasta
Boil the Tortelloni
In a large pot of salted boiling water, add the four cheese tortelloni. Cook according to package instructions, typically around 3-5 minutes until they float to the top. Once cooked, drain and set aside.
Preparing the Sauce
Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced mushrooms and cook until they are browned and tender, about 5 minutes.
Add Peas and Prosciutto
Stir in the fresh peas and sliced prosciutto, cooking for an additional 3 minutes until the peas are tender.
Create Cream Sauce
Pour in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally. Add the grated Parmesan cheese and mix until melted and combined. Season with salt and black pepper to taste.
Combining Ingredients
Combine Tortelloni and Sauce
Add the cooked tortelloni to the sauce in the skillet. Gently toss to coat the pasta evenly with the creamy sauce and vegetables.
Serve
Serve immediately, garnished with additional grated Parmesan cheese and a sprinkle of black pepper if desired.
