    Prepare the Veal

    Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. This will help them cook evenly.

Breading

    Set Up Breading Station

    In one shallow dish, place the all-purpose flour mixed with salt and black pepper. In a second dish, beat the eggs. In a third dish, combine the Italian breadcrumbs and grated Parmesan cheese.

    Bread the Veal

    Dredge each veal cutlet in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb and Parmesan mixture. Press down gently to ensure the breadcrumbs adhere.

Cooking

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat. Ensure the oil is hot enough by testing it with a breadcrumb; it should sizzle when dropped in.

    Fry the Veal

    Carefully place the breaded veal cutlets into the hot oil, cooking for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

Assembly

    Add Sauce and Cheese

    In an oven-safe dish, spread half of the marinara sauce on the bottom. Place the fried veal cutlets on top and cover with the remaining marinara sauce. Sprinkle the shredded mozzarella cheese over the top.

    Preheat the oven to 375°F (190°C) and bake for about 20 minutes, or until the cheese is melted and bubbly.
